Meatloaf on the Smoker

The classic meatloaf dish is primarily cooked in the oven, but that doesn’t mean it’s the only cooking option you have! Using a smoker for your meatloaf is a great way to add a smoky flavor to your otherwise traditional dish that’s just as juicy as it would be if you put it in a pan in the oven. Cooking meatloaf on the smoker may take longer than it would if it was cooked in the oven, but the end result is permeated with flavor that’ll have the whole family raving about how great dinner was.

The meatloaf prep work is the exact same as it is if you’re cooking it in an oven: combine your meat, seasonings, breadcrumbs, and eggs together while the smoker is preheating. You should set your smoker to 275°F and once it’s fully heated up and ready to go, you can place the meatloaf on the smoker and leave it there for two hours. After the two hours, add your glaze on top of it and let it smoke for another hour or until you stick an internal thermometer into the thickest portion of your meatloaf and see that the internal temperature is at least 160°F to indicate it’s fully cooked. Then, remove your meatloaf from the smoker and let it rest for 10 to 15 minutes so it can finish cooking and once it’s rested, you’re ready to serve it!

Meatloaf Using Ritz Crackers

Most meatloaf recipes call for bread crumbs to be added to the mixture as a binding agent to keep it from falling apart. If you don’t have breadcrumbs, you can make meatloaf using Ritz crackers as your binding agent instead. Crushed-up Ritz crackers make a great substitute and add an extra burst of buttery flavor and moisture to your dish that regular breadcrumbs can’t quite match. One sleeve of Ritz crackers is about one cup when crushed up, so it’s a simple one-to-one substitution for breadcrumbs in any meatloaf recipe. The result is a moist and buttery delicious meatloaf that everybody will rave about.

Ingredients

  • 2 lbs. ground beef (80% lean 20% fat)
  • 2 eggs
  • 2 1/2 tbsp. garlic cloves (minced)
  • 1 1/2 large white onion (diced)
  • 1 sleeve of Ritz crackers
  • 1/2 cup whole milk
  • 5 tbsp. ketchup
  • 1 1/2 tbsp. Worcestershire sauce
  • 4 tbsp. fresh parsley (finely chopped)
  • 2 tsp salt
  • 1 tsp black pepper
  • 3 tsp Italian seasoning
  • 1 tsp smoked paprika

Instructions for Meatloaf Using Ritz Crackers

  1. Preheat oven to 375 F. Grease your meatloaf pan with nonstick spray.
  2. Crush up a sleeve of Ritz crackers into fine pieces while they’re still in the bag, then add them to a small bowl with your milk to let the crackers absorb that moisture.
  3. In a separate bowl, add the ground beef, ketchup, Worcestershire sauce, onions, garlic, and all of your seasonings. Then dump your Ritz cracker and milk mixture into the bowl and combine it all together.
  4. Once all the ingredients are combined, put your meatloaf mixture into the meatloaf pan and lightly press down on it until the top is even.
  5. Bake the meatloaf uncovered for 40 minutes. While the meatloaf bakes, prepare your preferred glaze.
  6. After 40 minutes in the oven, take the meatloaf out and add the glaze to the top of it. Then put it back into the oven to bake for another 15 minutes or until the center of the loaf has reached an internal temperature of 160 F.
  7. Let your meatloaf rest for 5 to 10 minutes then it’s ready to serve!

Meatloaf is great fresh out of the oven, but meatloaf leftovers can open up some tasty possibilities. You could just reheat the same dish, but why not turn those leftovers into exciting new creations? There are several creative ways to transform your meatloaf leftovers into entirely new culinary experiences.

Just because a dish is simple doesn’t mean that it isn’t delicious. Give your lunch a tasty upgrade by making meatloaf sandwiches. There’s nothing quite as disappointing as slicing into a beautifully baked meatloaf only to find it swimming in excess moisture. When your meatloaf is watery and lacking the hearty texture you were hoping for, don’t worry: You’re not alone in facing this problem. There are a few common reasons behind watery meatloaf, which you should keep in mind for next time.

Too Much Liquid

One of the most common reasons meatloaf is watery is an overabundance of liquid ingredients. Adding broth, milk, or eggs can enhance flavor and moisture, but too much can lead to a soupy consistency. Use these ingredients sparingly, and consider adding breadcrumbs or oats to absorb excess moisture.

Meatloaf is Mushy: Causes and Fixes

Meatloaf is a delicious go-to meal, but crafting the perfect meatloaf isn’t always as easy as some think. The recipe can go wrong in several ways, and discovering that your meatloaf is mushy and watery instead of firm and simple to slice can be a frustrating experience.

But what causes this to happen in the first place?

The most common reason meatloaf is mushy is too much liquid added to the mixture. Too much liquid will stop the meatloaf from baking and cause the meat to boil instead. There’s no need to worry, though, as there’s a solution to this problem. If there is too much liquid before you put it in the oven, you can squeeze out the excess. However, doing so can be difficult, so it’s best to be cautious about how much liquid you add from the beginning. Adding more to your mixture is always easier than taking some out.

Another common reason meatloaf is mushy is too much filler, like breadcrumbs, bread, and oatmeal. Too much filler will stop it from baking correctly and becoming a fully formed meatloaf. So, just as you would reduce the amount of liquid you use, reduce the amount of filler you use.

If it’s too late and you’ve already cooked your meatloaf, but it’s still mushy, do not throw it back in the oven. Remove the meatloaf from the pan you’ve been using and put it on a flat sheet pan instead. This change allows the liquid to spread more evenly to help the meatloaf cook, but it won’t look like the meatloaf you see in photos. The result will look a little flatter. However, the meat will be fully cooked and firmer.

Why is My Meatloaf Dry?

Meatloaf vs. Hamburger: What’s the Difference?

Meatloaf and hamburgers are both delicious, easy to make, and usually made with ground beef, but the similarities end there. Here’s a quick comparison of meatloaf vs. a hamburger:

  • Ingredients: Meatloaf is made of ground beef that’s seasoned and mixed with breadcrumbs and eggs to bind all of the ingredients together. Hamburgers are made of ground beef and a bit of salt and pepper: That’s it.
  • Shape: Meatloaf is baked in a loaf pan, so it comes out shaped like a loaf of bread. Hamburgers are round, flat patties cooked in a frying pan or on a grill.
  • Toppings: Meatloaf is often glazed with a ketchup-based sauce before it’s done baking. Some people also like to serve meatloaf with gravy. Hamburgers can be topped with just about anything, from a slice of cheese to a fried egg.
  • How it’s Served: Meatloaf is sliced like bread and served on its own with side dishes like mashed potatoes. Hamburgers are served on a bun, often accompanied by French fries or potato chips.

How to Cook Meatloaf on the Grill

Barbecue is most commonly associated with hamburgers and hot dogs, but did you know you can also cook meatloaf on the grill? Grilled meatloaf combines a classic comfort food with smoky barbecue flavors.

How to Make Meatloaf Using Bread

If you want to make meatloaf but don’t have breadcrumbs, you can still satisfy your craving by using bread. In fact, making meatloaf with bread can have a few benefits. First and foremost, it acts as a binder, helping to hold the ingredients together and preventing the meatloaf from becoming too dense. Additionally, bread can absorb excess moisture, helping the loaf to remain juicy and tender after baking.

Ingredients

  • 1 lb. ground beef (or a mixture of ground beef and pork)
  • 2 slices of bread, soaked in milk and squeezed
  • 1 finely chopped large white onion
  • 2 minced cloves of garlic
  • 1 egg
  • 1/4 cup ketchup or barbecue sauce
  • Salt and pepper to taste
  • 3 tsp. Italian seasoning

Instructions

  1. Preheat your oven to 375°F.
  2. In a large mixing bowl, combine the ground meat, soaked bread, chopped onion, minced garlic, egg, ketchup or barbecue sauce, salt, pepper, and Italian seasoning.
  3. Gently mix the ingredients until well-combined.
  4. Shape the mixture into a loaf and place it in a greased baking dish.
  5. Brush the top of the meatloaf with additional ketchup or barbecue sauce for a flavorful glaze.
  6. Bake for about 45-50 minutes, or until the internal temperature reaches 160°F.
  7. Allow the meatloaf to rest for a couple of minutes before serving.

How to Cook Meatloaf with Almond Flour

If you don’t have any breadcrumbs on hand or you are looking for a way to make your meatloaf gluten-free, low-carb, and keto-friendly, cooking your meatloaf with almond flour as a binding agent instead could be a great option. Almond flour can provide a nutty flavor to your meatloaf that pairs perfectly with the savory nature of the other ingredients. So, if you’re on a diet, you don’t have to feel like you’re sacrificing a single tasty meal. Alternatively, if you want to add a touch of almond flour but you don’t want to make your meatloaf with almond flour as the binding agent, you could opt to coat your loaf in a little bit of almond flour to enhance the browning and create a crispier exterior.

  • 2 lbs lean ground beef (90% lean 10% fat)
  • 1 large egg
  • 3/4 cup grated Parmesan cheese
  • 2 tbsp minced garlic cloves
  • 1/2 cup blanched finely ground almond flour
  • 2 tsp kosher salt
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1/4 cup unsweetened or sugar-free ketchup
  • 2 tbsp finely chopped parsley to use as a garnish

Instructions for Cooking Meatloaf with Almond Flour

  1. Preheat your oven to 350 F. While you wait for it to preheat, take your loaf pan or rimmed sheet pan and grease it with nonstick cooking spray, then let it sit while you put your meatloaf together.
  2. Mix your spices in a bowl, then add the ground beef, Parmesan cheese, and almond flour. Combine the ingredients well.
  3. Press your meatloaf mixture into your loaf pan or shape it to be loaf-shaped and place it on your prepared baking sheet.
  4. Bake for about 40 minutes. Then take it out, brush on some unsweetened or sugar-free ketchup, and put it back in the oven for another 20 minutes or until the center reaches 160F.
  5. Garnish it with parsley, let it rest for 10 to 15 minutes, and then serve.
