This meatloaf recipe with oatmeal is a unique twist on a classic that comes out moist, tender and packed full of flavor. The combination of meat, mushrooms and spices are perfectly balanced and always has people coming back for seconds. Enjoy!

Ingredients

  • 3 eggs
  • 1/4 cup ketchup
  • 3 tsp Italian seasoning
  • 2 tsp kosher salt
  • 2 tsp black pepper
  • 1 medium onion (diced)
  • 1/2 cup old fashioned rolled oats
  • 1/4 cup parsley (chopped)
  • 2 garlic cloves (minced)
  • 8 oz bella or white mushrooms (coarsely chopped)
  • 2 lbs ground beef (90% lean 10% fat)

Instructions 

  • Preheat oven to 350F. Grease a traditional loaf pan with nonstick cooking spray.
  • Whisk together the eggs, seasonings, and ketchup before adding in the onions, mushrooms, parsley and oats. Mix until just combined.
  • Then, add in ground beef and combine gently. Transfer the meatloaf mixture to the pan and gently press to ensure the top is smooth. You can brush on additional ketchup as a glaze if desired.
  • Bake for about 60-75 minutes, or until the internal temperature has reached 160F. Rest 10 minutes before serving.
